I <3 this SWEET POTATO soup. I edited it to please my pallet and ease of preparation. Use sweet potatoes instead. Bake in oven at 350 for app 30 min. Turn if necessary and bake 30 more min or until soft enough to eat. Use Olive Oil instead of Sunflower Oil if desired, use 2 cups water, 2 cups low sodium vegetable broth instead of 6 cups water. Add 1 tsp of rosemary to the Vitamix. Blend on high for 5 min or so and WALA, you have a steamy soup! This is how I like it anyway!
