    Chicken Schnitzel For a side dish, toss cooked egg noodles with some butter, and sprinkle with fresh parsley. Serve with mustard and lemon wedges that can be squeezed over the chicken. Can add paprika or sesame seeds to coating. Also consider mixing a little corn starch into the flour.

Chicken Schnitzel Recipe. MODIFICATIONS: used 2 chicken breasts, sliced in half; used scant 1 cup pretzels coarsely chopped in food processor and scant 1 cup panko bread crumbs; one egg and 2 healthy TBS Dijon mustard; added cayenne pepper to panko/pretzel mixture and pepper & paprika to flour. No salt added due to salt in pretzels. Husband and kids ate seconds - score!
