Put bacon strips in muffin tin and then add whipped eggs with a little cheese about 3/4 full. Bake @ 350 degrees for 30 min. Delicious!
Baked Egg Cups 12 Eggs 12 thin slices of deli ham (round) 1/2 Cup of your favorite cheese (I used Parmesan) 1/2 Cup diced scallions Fresh cracked Sea Salt and Pepper Preheat the oven to 400. Spray a muffin tin with cooking spray. Lay a piece of ham in each hole creating a little ham cup. Crack one egg into each hole and sprinkle with salt and pepper.
ham and egg breakfast cups These are a lot like an omelet on the go! I added chopped ham rather then lunch meat. Great fresh out of the oven and warmed up the next day. Next time, however, I will put liners in the tin! They were not easy to get out even though I spayed them AND I had a hard time cleaning the pan. -KM

Caprese Baked Egg Cups: I'm on a huge run of baking eggs in the morning and putting them on a bagel. This might be messier...but it would spice that dish up a bit and that might not be a bad plan since I think my husband might be about tired of my usual!
Egg Spinach Quiche Cups:10 ozs. frozen chopped spinach, 3/4 cup egg whts, 3/4 cup shredded fat free cheese, 1/4 cup red bell pepper, chopped 1/4 cup onion, chopped fine hot sauce (optional) Microwave the spinach on high 2 1/2 mins. Drain completely. Line a 12 cup muffin tray w/foil baking cups. Spray the cups w/cooking spray. Combine the egg whts, cheese, mushrooms, spinach & onions in a bowl. Add hot pepper 2 taste. Divide evenly among the cups. Bake at 350, 25mins. Makes 12 muffins 75 cal ea.
