Shrimp Salad Yield:4 servings 11/2 pound medium shrimp, peeled, deveined, cooked and tails removed 2 stalks celery, finely chopped 1 grn onion, finely chopped 1/2 cup Italian parsley, finely chopped 3 Tlemon juice 3 T olive oil 1/4 t sea salt. Mix & cool 30 min. Serve over mixed greens or with tomato slices on buns
Best salad EVER, introduced to my life by @Jillian Embrey. Chicken, feta, corn, celery, red onion, blueberries, dill... other stuff... @Caitlin Rhodes knows what it's all about. Easy and GOOD. Every time I make it, I wish I'd tripled the recipe.
