Black Bean Taco Salad -- I add spicy chicken or ground beef with taco seasoning and make dressing out of equal parts sour cream and salsa. Probably takes some of the healthy out of it. But Soooo good!

Quinoa and black bean salad. - I made this last night and it is so yummy and flavorful! I portioned it out and refidgerated it to throw right into my lunches this week, made 3 hardy servings as a "main dish" and was filling and great cold.
