    Crock Pot Santa Fe Chicken (Weight Watchers) 24 oz (1 1/2) lbs chicken breast 14.4 oz can diced tomatoes with mild green chilies 15 oz can black beans 8 oz frozen corn 1/4 cup chopped fresh cilantro 14.4 oz can fat free chicken broth 3 scallions, chopped 1 tsp garlic powder 1 tsp onion powder 1 tsp cumin 1 tsp cayenne pepper (to taste) salt to taste Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and lay on top. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Serve over rice.

    crock pot santa fe chicken. This was good, but not all that different from most other crock pot chicken recipes that involve corn and beans. I think I have two variations or similar things pinned and tried already.

Crock Pot Santa Fe Chicken. Made this for dinner tonight - YUM! And only 4 WW points per serving! I added a Serrano for a bit of heat, but it didn't do much to such a large batch. Next time, I'd probably add two. --- Day two: Reheated it and put it on top of some warm garlic bread. Uh, DELICIOUS.

    I tried this last week and loved it. My mom came over and had some as well. She liked it so much she took some home to her boyfriend and ended up splitting it 3 ways with herself, my brother and her BF...they all loved it! hahahaha

Going to try this but modified. I don't have Herbs De Provence so I'm not sure what I will rub it with. I don't have red peppers so I'll layer the bottom with onion and carrots and stuff the bird with apples, carrots and onion. We'll see how it tastes.
