Hawaiian Grilled Chicken **Marinate this chicken at least 4 hours, I prefer overnight!! Growing up my parents would take us camping on a regular basis. It usually consisted of going with their friends Jerry and Cathy, and Jerry made one mean grilled chicken recipe. He called it "Polynesian chicken" and it was salty, garlicky and slightly sweet with a perfect chargrilled flavor. As the years passed on my parents lost touch with their dear friends and just recently reconnected with them. Hearing my Dad talk about their plans to meet back up with their long time friends had me thinking about that Polynesian chicken! I quickly googled for similar recipes, but didn't find any recipe that had ingredients in it that triggered my memory. I was thinking soy sauce, garlic and maybe some type of sugar..simple and flavorful ingredients. A disappointing hour later, I decided to just give up and hopefully bribe my Dad to gently ask his friend for the secret recipe! The next day before calling my Dad, I signed into blogger and just started scanning some posts in my google reader. If you can believe this...there was a post for "Hawaiian Grilled Chicken"! Seriously. Top ingredients...soy sauce, garlic and brown sugar!! Shut the oven door! This was exciting. I made it that night and it was everything I remembered from my Dad's friend..only....dare I say it? BETTER! Now, I know it's not called "Polynesian chicken" but ya know...whatevs! Oh and yes I'm a white meat kinda girl myself but don't let the use of chicken thighs scare you. They are moist and much more flavorful--trust me..you will thank who ever originated this recipe blog post and blog post back! Ingredients: 3 pounds of boneless skinless chicken thighs 2 cups low sodium soy sauce 2 cups water 1 1/2 cups brown sugar 1 bunch of green onions, chopped (save some for the top) 1/4 cup white onion, chopped 1/2 teaspoon minced garlic 1 teaspoon of sesame oil 1 (13.5oz) can of coconut milk Directions: 1. Remove visible fat from chicken thighs. Mix soy sauce, water, brown sugar, onions, garlic, sesame oil, and coconut milk in a large bowl. Marinade chicken for at least 4 hours or overnight. 2. Grill chicken at a low heat so that the marinade does not burn for 5-7 minutes per side or until done. 3. Serve with rice or noodles, top with green onion and additional soy sauce. **I served this with coconut rice as recommended from the original blogger. When making your rice, just simply replace half of the water amount with coconut milk.

Baked scrambled eggs in muffin tin. Easy make ahead healthy breakfast. And low carb if u use just eggs, cheese & meats. :)
Egg Muffins Revisited Again (Makes 12 muffins, recipe created by Kalyn with inspiration from The South Beach Diet book. 15 eggs (for silicone muffin pans, use 12 eggs for metal muffin tins or individual silicone cups. You can use less egg yolks and more egg white if you prefer.) 1-2 tsp. Spike Seasoning (optional, if you have food allergies or don't have Spike, use any type of seasoning blend that's good with eggs.) 1-2 cups grated low fat cheese (I like sharp cheddar or a blend of cheddar/Jack cheese, use less cheese if using meat) Optional, but highly recommended, 3 green onions diced small. Optional: chopped veggies such as blanched broccoli, red pepper, zucchini, mushrooms, etc. (Using veggies will reduce the fat content) Optional: diced Canadian bacon, lean ham, or crumbled cooked turkey sausage Preheat oven to 375 F. Use regular or silicone muffin pan, 12 muffin size. If using silicone pan, spray with nonstick spray. If using regular muffin pan, put two paper liners into each slot, then spray liner with nonstick spray. In the bottom of the muffin cups layer diced meat, if using, vegetables, if using, cheese and green onions. You want the muffin cups to be about 2/3 full, with just enough room to pour a little egg around the other ingredients. Break eggs into large measuring bowl with pour spout, add Spike, and beat well. (I used to add a bit of half and half or milk, but lately I like the way they turn out without it.) Pour egg into each muffin cup until it is 3/4 full. I like to stir slightly with a fork. Bake 25-35 minutes until muffins have risen and are slightly browned and set. Muffins will keep more than a week in the refrigerator. Egg muffins can be frozen and reheated, but I like them best when they are just refrigerated. For best results, thaw in refrigerator before reheating. Microwave on high about 2 minutes to reheat.

Place the quartered artichokes in a bowl, drizzle olive oil all over, place grated romano cheese between the leaves along with salt, pepper, finely chopped garlic and fresh parsley. Place them on a hot grill turning them over until the cheese gets crusty and garlic cooks, it just takes a few minutes.
