These Texas Cowboy (Cow Chip) cookies are crispy on the edges but chewy and moist in the middle, and have a hundred mix-ins (Pecans! Chocolate! Corn Flakes! Coconut!) that combine to make the Texas of all cookies.
This is a great appetizer that my family will gather around the counter to eat while the rest of our dinner cooks on the grill. Lots of preparation can careful watching is required, but it is delicious. Especially with a light red wine.
