    fish cookie cutter-markings done w/edge of pottery loop tool. 4 oz butter, 8 oz Cheddar grated, 6 oz flour, 1/2 tsp salt, 1/4 tsp cayenne pepper (optional) *Cream butter; add cheese, mix well. Add flour & salt, mix. Roll into 3 logs, size of cookie cutter. Chill at least 1 hour. Cut into 1/8" thick rounds then cookie cut. Place on a parchment-lined sheet pan. Sprinkle lightly with sea salt. Bake 350°8-12 min until crisp. Cool on wire rack. Store airtight container 3 days.
