Okay. Let me start off by saying I know this is kind-of similar to the Cheesy Tomato and Spaghetti Squash Bake I just posted about a few days ago. The thing is...it's not the same. This one is so creamy and cheesy and mind-blowingly delicious. Don't get me wrong.....the Cheesy Tomato and Spaghetti Squash Bake was tasty and I will totally be making it again BUT... this one.... There are no words. It's like discovering chocolate and peanut butter for the first time. No. I'm not even kidding. And then, to make things even crazier.... the entire recipe of this deliciousness is only 220 calories. Oh my goodness! Oh my goodness! Oh my goodness! It's true. I swear on my taste buds it truly is THAT awesome. The only thing missing from this is peas. I love peas in my macaroni and cheese. I did not have any on hand but next time (and there WILL be a next time) I'm totally putting peas in this too. Dreamy "Mac & Cheese" Spaghetti Squash (Single Serving) Ingredients 1/2 Tbsp flour salt & pepper 1/4 cup milk (1%) 1/4 cup Tex Mex blend shredded cheese 1 1/2 cups spaghetti squash, cooked 1 slice green pepper, finely diced 1 green onion, finely diced 1 Tbsp frozen peas 1 Tbsp Parmesan cheese, shredded Directions Preheat oven to 350. Spray a small casserole dish with cooking spray. Set aside. In a small saucepan, over medium heat, whisk together flour and salt & pepper. Slowly whisk in milk until smooth. Cook and stir until thickened. Remove from heat and stir in Tex-Mex cheese until melted and smooth. In a bowl, stir the cheese sauce into the cooked spaghetti squash until well combined. Spread in prepared casserole dish. Sprinkle with the green pepper, onion, peas, and Parmesan cheese. Bake at 350 for about 20 minutes, until cheese is melted and squash is heated through. Remove from heat and enjoy the entire dish for 220 calories, 9 fat, 20 carbs, and 17 protein. I understand that I am hyping this up and that usually just sets people up for disappointment. BUT... I just cannot hide my excitement for this dish. Without it actually being macaroni and cheese it is almost like macaroni and cheese. I know you are not going to fool anyone into thinking it's pasta but, if you are trying to do the whole "eat healthier" thing, you will be able to satisfy those pasta cravings. Southwest Spaghetti Squash We've been having lots of fun with spaghetti squash lately in our house and this is one of my favorite recipes! We just used everything we normally would for a Southwest turkey burrito or taco and mixed it in with some baked spaghetti squash. It's super easy and super healthy. Enjoy this dish with friends, as a large spaghetti squash will feed up to 6 people with this recipe! This dish can be served hot or cold, so it works for lunch or dinner any day of the week. The leftovers are just as delicious, and if you add a few scrambled eggs the next morning, this is a fantastic leftover breakfast! Southwest Spaghetti Squash Prep Time: 20 minutes / Cook Time: 40 minutes / Servings: 6 Ingredients: Southwest Spaghetti Squash 1 large spaghetti squash 1 lb. lean ground turkey 2 medium Roma tomatoes, chopped 1 red bell pepper, seeds removed and chopped 2 ears of white corn, kernels removed and ears discarded 1 can black beans, rinsed and drained 3 scallions, chopped 1/4 cup chopped fresh cilantro (plus a few sprigs for garnish) 1 avocado, peeled, seeded and thinly sliced juice of 1 lime 3 tbsp. olive oil 2 tsp. garlic powder 1 tbsp. ground cumin 2 tsp. chili powder 1 tsp. paprika 1/4 tsp. cayenne pepper (optional) salt and pepper Steps: Preheat the oven to 400 degrees. Using a large knife or a cleaver, slice the spaghetti squash in half lengthwise down the middle. Use a spoon to remove the seeds and center strings. Drizzle the two halves with 2 tbsp. of olive oil and then sprinkle with salt, pepper and 1 tsp. garlic powder. Place the squash, open side down on a cookie sheet and bake for 30 minutes. Remove from the oven, check to see if the squash is soft and easily comes up with a fork into a spaghetti like texture. If it's too hard to remove, cook for another 10 minutes. Remove from the oven, scrape and fluff the stringy squash with a fork. Transfer the spaghetti squash to a large mixing bowl, but reserve the shells. Heat a large skillet with 1 tbsp. olive oil on medium heat. Add the ground turkey, scallions and red bell pepper. Season with salt and pepper, 1 tsp. garlic powder, cumin, chili powder, paprika and cayenne powder. Stir to combine and continue to cook on medium heat until the veggies are soft and the turkey is browned and cooked through, about 7-10 minutes. Remove from the heat and set aside. In the large mixing bowl with the spaghetti squash, add the turkey mixture, tomatoes, corn, black beans, cilantro and lime juice. Stir with a fork to mix until all ingredients are combined. Adjust seasoning if necessary. Fill the two squash shells evenly with the mixture, garnish with the avocado slices and a few more sprigs of cilantro. Southwest Spaghetti Squash

Twice-Baked Butternut Squash Recipe. I've made this twice. I always make 1 squash (just 2 of us) use the bulb end for this and save the top for another dish. Spoon out squash, mix by hand, add shallots I sautéed, little sour cream and salt and pepper. Warm and serve. (We didn't like the bread crumbs). Now it's a keeper.
