Lasagna with zucchini instead of pasta. It was actually delicious and I would make it again. Even my husband who wont eat zucchini liked it. I didn't miss the pasta at all. I made a few alterations. Fresh basil, store bought sauce, diced tomatoes, extra cheese, ricotta instead of cottage cheese and I didnt pre cook the zucchini because I like a little more texture. The Best Low Carb Lasagna Ever! Dinner last night. I used diced tomatoes over spaghetti sauce and omitted the broccoli and cauliflower. Very good. The next time I make it I will omit the ricotta layer as well. We are not huge fans of it but I wanted to try. Found out my children love zucchini !
