      freezer egg McMuffin sandwiches for busy mornings: Lightly grease muffin tins + crack one egg in each well. Stick these in a 350 degree oven for about 15-20 minutes. Assemble: whole wheat English muffins + egg + cheese + Canadian bacon/ham/sausage, wrap and freeze. They stuck a little to my muffin pan... but still worked great!

      Perfectly cooked, shaped eggs - and you can bake a whole lot simultaneously: grab a muffin tin and and lightly oil each spot in the tin with butter or spray oil. Crack an egg in each muffin area! Stick these in a 350 degree oven for about 15-20 minutes (I recommend closer to 15; 20 made them a little rubbery). Put on a English muffin, with shredded cheese. Can be frozen and reheated. Brilliant!

I make mine a bit different than the original pin: Lightly grease muffin tins + scramble 12 eggs & pour evenly into muffin pan, sprinkle w pinch of shredded cheddar cheese. Stick in a 350 degree oven for about 15-20 minutes. Assemble: English muffins + egg + cheese + Jimmy Dean turkey sausage patties, wrap in a paper towel then in plastic wrap & put in a gallon frezzer bag and freeze. Zap in microwave for 1:30 min 50% power then 1 min full power to reheat.

    Pancake Bites. Use your favorite pancake mix, pour into muffin tins, add fruit, nuts, veggie sausage or bacon, chocolate chips, etc. Bake at 180 for 12-14 minutes

    Mini pineapple upside down cakes. Super easy! I didn't have any cherries, so just used pineapple, and I chopped mine up. Overfilled my muffin tins a bit, so my cake was a tad dry. Only one muffin got stuck, rest came right out. Not as sticky/heavy as regular pineapple upside down cakes, and good for lunch packing!
