Baked-Potato Eggs

Twice baked potato breakfast skillet --> 1) Scrub 2 large baking potatoes, pierce with fork, bake at 400 F for 45 minutes. 2) Cut each potato in half, scoop out insides, stir in 2 tabs butter, 1/4 c parm cheese, fold in precooked sausage or veggies of choice, spoon the mixture back into the 4 potato halves. 3) Create a hollow in each center, break 1 egg into each hollow, bake 10 min or until set.
