We love a good mexican meal, and this definitely tasted more decadent than the calories/points you were taking in. The meal is easy to prep- one skillet to cook, a bowl to mix, and then you assemble it all in a baking pan. The only change I would make next time, would be to add a layer of cheese in the middle since the only bite of cheese is from the top. Nice easy, hot meal that you can get on the table in an hour.
