Peanut butter oatmeal squares 1 1/2 cups quick cooking oats 1/4 cup packed light brown sugar or maple syrup(if replacing using maple syrup, only put half of a flax egg) 1 teaspoon baking powder 1/2 teaspoon kosher salt 1 teaspoon ground cinnamon 1 teaspoon vanilla extract 1/2 cup milk and 1 flax egg(1 tbs ground flax with 2 tbs water or soymilk 1 large mashed banana 1/4 cup creamy peanut butter Pour into a lightly greased 8 by 8 baking pan and spread evenly. Bake at 350 degrees for 20 mins

In a large bowl, mix mashed banana and peanut butter until completely combined. Then add in the applesauce, vanilla protein powder and vanilla and butter extracts. Mix again until completely combined. Add in the oatmeal and nuts to the banana mixture and combine. (Add the optional carob/chocolate chips at this time if you want them mixed throughout.) Let dough rest for 10 minutes. Drop cookie dough, by spoonfuls, onto a parchment paper lined cookie sheet and flatten cookies into circles, about a 1/3″ thick. Remove from oven and let rest on cookie sheet for 5 minutes, then move to cooling rack. (If you want the traditional fork tine marks on the cookies, use a pizza cutter or sharp knife to score the tops of the cookies while they’re still warm.) Cookie Dough Oatmeal Cake- I doubled the recipe & put it in muffin tins. Only 138 calories ea. & filling! Oatmeal, banana, almond butter, milk, dark chocolate chips. Next time, I'll use applesauce instead of a banana. It was good & simple though!
