THE rice and beans recipe that I love and make all the time... with my own twists (sub 1/2 veg broth with juice from jar of banana peppers, add a couple of bell peppers in to saute with the onion and garlic, and, if I have some on hand, throw some broccoli stalks into the food processor to add with the rice, etc.)
Lemon Chicken Pasta - love the combo of basil, garlic, parmesan, and lemon. I usually increase the lemon, up to doubling it, as I really like the lemon. Also, sometimes I sub white wine or broth for the heavy cream to lighten the dish.
Oven roasted Cauliflower - Made this for healthy alternative Oscar watching snack. Didn't think I'd like it...it's cauliflower. With some Walden Farms BBQ sauce to dip, they didn't make it to the red carpet. YUM!
