For anyone that may not know, the BEST way to make "hardboiled" eggs is in the OVEN! Place the eggs in a muffin tray so they do not move around, turn the oven to 325 degrees, pop in for about 25-30 minutes and remove! Not only are they tastier, but they also are much easier to peel!

We do 375 for about 20 min instead of 400 for ten because the lower and slower the more fat renders out. I hate getting SPLATTERED!! breakfast ham/egg enchiladas - these were very easy. I almost folded in the ends of the tortillas like I normally would on an enchilada, but I'm glad I didn't, because leaving them open is part of the miracle of these enchiladas. The egg makes its way inside of the tortillas and bakes in there!
