Mexican horchata using rice. Would love to try making the Spanish version with Chufa if I can easily find Chufa. Horchata is one of my favorite drinks. If it were easy to buy, I'd drink it every night instead of my whole milk with dessert. horchata.Ingredients 4 cups whole milk 1 cinnamon stick 1 can (14 ounces) sweetened condensed milk 1/2 cup rice or almond flour (bobsredmill.com) 2 teaspoons pure vanilla extract 1/2 cup dark or light rum (optional) Ice cubes Garnish: ground cinnamon and cinnamon sticks
#paleo Cinnamon Horchata Milkshake: Substitute unsweetened Almond Milk for 2 cups rice milk; Substitute ⅓ cup honey for 1/2 cup sugar; 2 cinnamon sticks; 1 tsp almond extract; 1 can unsweetened coconut milk | In a saucepan, bring almond milk, honey, cinnamon sticks and almond extract to simmer over medium. Gently simmer, about 5 minutes. Refrigerate 2 hours or overnight. Combine chilled mixture, coconut milk and ice in blender. Blend until frothy; sprinkle with cinnamon.
