Greek salad with smoked chicken and eggplant

Serves 4


1 Chicken breast, smoked


2 Baby cos lettuce, dried leaves
2 slices Bought chargrilled eggplant
125 g Cherry tomatoes
1 tsp Oregano, dried
1 Red onion, small wedges thin


150 g Kalamata olives

Oils & Vinegars

2 tbsp Olive oil
1 tbsp White wine vinegar


100 g Lemnos full cream fetta


70g bought chargrilled capsicum, coarsely chopped
