Yet another one from Moosewood cooks at home. I guess Im in the mood for stew! You can top this with grated cheddar if you like (or vegan cheese for that mater). Cilantro is optional, but I think it really makes it. I also like cornbread with this - very satisying.
Aubergine stew with olives and capers...chunked eggplant, sliced onion, 2 garlics, oil, cooked til soft, 10 min. Add olives, capers, stock, chopped basil, cook few more min til thick. On pasta, rice, bread
