    Stuffed avocado salad #recipe ~ In a small bowl, whisk together 1 tsp olive oil, juice from 1/2 lime, 1 small garlic clove minced, a pinch cayenne, & salt to taste. Scoop out meat from avocado halves & chop. Transfer to bowl & add 1/2 chopped yellow bell pepper, 6 cherry tomatoes halved, 1 thinly sliced scallion, & 1 Tbsp chopped cilantro. Drizzle with dressing & stir gently to combine. Spoon back into avocado shells, garnish with cilantro leaves.
