    I followed the recipe and no raw chicken for me. But I cut the chicken into very small cubes. Suggestions: Add way more broccoli and seasoning! The recipe turned out great but slightly bland. I would add oregano, paprika and chile powder in the future to give it a kick.

    I too will cook my chicken before I put it in the casserole dish. I also have never made a casserole dish that uses raw rice, where it wasn't cooked before hand. A really good seasoning for this casserole if you want to get it some Zip would be to add poultry seasoning. Poultry seasoning contains several spices that when mixed together pare well with chicken. Start with maybe 1/2 to 1 tsp. of the seasoning.

    I didn't have any issues with raw chicken but I too cut my chicken into 1 inch pieces. However, instead of Rita crackers I used Frenchs French fried onions crushed up with a little salt and pepper and this complelty eliminated the bland issue. This was a family favorite even with the picky eaters in the group:)
