    Kitchen Tip: Freeze preserve fresh herbs in olive oil. Why? Preserving herbs in oil reduces some of the browning and freezer burn that herbs can get in the freezer. It's also a great way to have herbs ready immediately for winter stews, roasts, soups, and potato dishes. These usually call for oil to start with, so take a cube of frozen oil and use this as the base of your dish. Cook the onions and garlic in the infused oil to let the herb taste spread through the dish. | The Kitchn

    Freeze & Preserve Fresh Herbs in Olive Oil Kitchen Tip - 8 Steps for Freezing Herbs in Oil 1.Choose firm, fresh herbs. 2. chop or leave them in larger sprigs and leaves. 3.Pack in ice cube trays about 2/3 full of herbs. 4.You can mix up the herbs, too. 5.Pour extra-virgin olive oil or melted, unsalted butter over the herbs. 6.Cover lightly and freeze overnight. 7. store in freezer containers or small bags. 8.label each container or bag the herb (and oil) inside!
