Caldo De Pollo (Paleo chicken tortilla soup sans tortillas) - 1 chicken carcass, 5 carrots, diced 1 red onion, diced 1 14.5oz can diced tomatoes 1 cup Salsa Verde (I like the Trader Joe’s brand) 1/2 tablespoon garlic powder 1 tablespoon cumin 1 tablespoon dried oregano 1 teaspoon smoked paprika 1/8 teaspoon cayenne pepper Sea salt and black pepper to taste
paleo cheesecake for the crust: 1/2 cup raw pecans (pecans don't require soaking) a little more than 1/2 cup soft pitted dates 1/4 cup raw flaked coconut tiniest pinch of sea salt for the filling: 3 1/2 cups raw cashews (soaked & drained) 2/3 cup agave nectar 2/3 cup extra virgin coconut oil 2/3 cup fresh lemon juice 2 teaspoons vanilla extract or 2 vanilla beans, scraped ---P4
paleo pumpkin-walnut muffins via carrots n' cake. Left out walnuts, added vanilla and a 1/4 cup of coconut oil and an 1/8 cup more almond flour. Then I mixed in bits of dried pear into half before baking them and chocolate chips into the other half. Yum!!
