White Chicken Enchiladas - went to a dinner party last weekend had these enchiladas. They were SO good! SO creamy and delicious! No Cream of Anything Soup in them either! Wishing I had some leftovers for dinner tonight.

Making these tonight ...Grafs choice.......Notes.....I cut Sour cream in half. Added a small can green enchilada sauce to chicken mixture. Added to much cheese on accident. Cut the Cumin by almost half, added almost an entire md onion. Cheese mix was 1/2 pepper jack, 1/2 Queso Blanco. Spinach was 1 bx froz, and 2 massive handfuls of fresh spinach chopped. If it turns out, Ill let you know

    I would have to blindfold my son. If it's green, he doesn't eat it. Damn Mother's Curse sent me a kids who is even pickier than I am (in different ways, of course)!!!!

    @mary just tell him it's herbs! Lol. I started feeding my kids spinach early on. I would get them in the kitchen with me and drench a couple leaves in ranch. They would gobble it up. I just cut the ranch back little by little until now they live to munch On it. Get them in the kitchen to help. They are more likey to try it if they make it.

Creamy Shrimp Enchiladas - The Girl Who Ate Everything. ****Made these last night 7/23/13. Sooo Soo good! I cut the salt by half. Next time will probably cut it completely and I will use corn tortillas rather than flour. It was a big hit!! Filling could also be used on pasta, or just with some chips!
