Cut an Italian loaf in half. Preheat oven to 350 degrees. Spread butter and garlic spread onto both pieces. Season with Italian seasoning and sprinkle with mozzarella and bake for 10 min and sprinkle with parsley when done baking. For the sauce, warm a cup of tomato sauce in a small pot until hot. A great starter dish or a side for a pasta dinner.

Sicilian Ricotta Pie - Judith's comment: as a child growling up in an Italian home...when we asked our grandmother to bake us a pie...this is what we had...we meant the cherry pie our friends had for desert after dinner... from the grocery store...oh never ever . when we grew up we realized how fortunate we were/are!

Pies made in a cupcake pan. Marie's comments of 11-10-12: To make six mini pies, I used a muffin top pan, one Pillsbury refrigerated pie crust and a 21 ounce can of Wilderness country cherry pie filling. Used egg wash on the bottom and sides of crust, filled each with approximately 1/4 cup of pie filling, and baked for 25 minutes. Very nice pies!
