"Lemon Ricotta Pancakes with Blackberry Sauce" For the pancakes: 1 cup ricotta cheese 1 cup milk 3 large eggs, separated Zest and juice of 1 lemon 1½ cups cake flour* 1 tbsp. baking powder ¼ tsp. salt ¼ cup sugar ~I made these for Fun Friday Family Brunch and they are out-of-this-world delicious! J said they are the best pancakes he has ever had & I am inclined to agree. I substituted blueberries & rhubarb (in the freezer from last summer's foraging) and simmered them down nearly into a compote. Fantastic combo. Served with a side of shoulder bacon. :-) Puts a smile on the faces of my family!
