1 Red chilies

1/4 cup Fish sauce
1 Fish sauce
1 Hoisin sauce

Pasta & Grains

1 lbs Small (1/8-inch wide) dried or fresh “banh pho” noodles

Baking & Spices

1 Cardamom pod, black
2 Cinnamon sticks
6 Cloves, whole
1 tbsp Coriander seeds
1 tbsp Fennel seeds
1 1-inch piece Rock sugar, yellow
1 1/2 tbsp Salt
6 Star anise

Liquids

6 qt Water
