Take a thick slice of avocado (leave the skin on) and remove the nut, hollowing a little extra room into the space left in the middle (I used a shot glass as a kind of cookie cutter). 2.Place an avocado slice in a lightly oiled pan and crack in an egg then stick in the oven at 350 and let cook for a couple of minutes (cover with foil for last 5 mins if you don't like your eggs a little runny). 3. Finish by seasoning as you like – I just used salt and pepper.

Lighter Than Air Low Carb Pancakes 3 eggs 1/2 cup ricotta cheese 2 tbsp. cream cheese, softened 3 tbsp. coconut flour 1 tbsp. protein powder 1 tsp baking powder pinch baking soda cream Whisk eggs until frothy. Mix in remaining ingredients until smooth. Melt butter on hot griddle. Pour 1/4 of batter on griddle for pancakes. Cook until brown and firm enough to turn. Turn and cook other side. Serve with butter and your favorite low carb topping. Makes about 8 four inch pancakes.
