Crustless quiche. Made this for Easter brunch. Turned out super yummy. Subbed onions for the zuchini.
Sausage and Mushroom Crustless Quiche 1/2 medium onion, diced (1/2 cup) 6-oz cremini mushrooms (1 cup) approx 1 – 1 1/2 cups diced sausage, cooked 2 large eggs 2 large egg whites 1/2 cup all purpose flour 1/2 tsp baking powder 1/4 tsp salt pinch cayenne pepper 1 1/3 cups milk (low fat is fine) 1/4 cup grated Parmesan cheese
Quiche •8 turkey breakfast sausages (2 syns) * •2 onions, sliced •2 ripe tomatoes, sliced (I used Roma’s) •3 large potatoes, grated and dried of moisture •6 baby bella mushrooms, sliced •350g of fat free cottage cheese •4 eggs •120g of cheddar cheese (4xHEa’s) •Frylight or Pam spray •salt and black pepper •Fresh parsley
Crustless mini quiche. The recipe calls for broccoli and cheddar, but can sub asparagus, cherry tomato, mushroom, bacon, gruyere, swiss, brie, etc. Maybe add some onion or garlic powder to egg mixture. Crustless Mini Quiches Recipe at Epicurious.com
