The One Chocolate Mug Cake ~ Budget Bytes. This is an egg-free, single-serving size recipe. I used gluten-free pancake mix instead of flour (Bob's Red Mill brand) & omitted the baking powder & salt. I used coconut oil for the oil in the recipe. I topped the batter with a sprinkle of semi-sweet chocolate chips before cooking...delicious! *Note: to make the cake stick less to your mug, you can spray it with non-stick cooking spray & then pour your batter mixture into it.*

Made this for a friend's engagement party..... so delicious! Make sure to have three inch high pans though instead of two (otherwise it will overflow) or make four layers instead of three. Also, allow time for the frosting to soften before frosting. (i always forget that!)
