I made this tonight and it is my new favorite summer recipe!!! Avacado Chicken Salad ~ 1 cup chicken breast, cooked & shredded; ¼ cup corn; ¼ cup black beans, rinsed & drained; ¼ cup green onions, chopped; ¼ cup tomatoes, diced; ¼ cup cilantro, chopped; ¼ cup corn chips, crushed; 2 TBsp white vinegar; 4 TBsp mayonnaise; Salt to taste; 2-4 avocados, halved

Quick Summer Fruit Salad - 1 pkg vanilla instant pudding, 1 can pineapple, 1 lb. strawberries, 1 cup blueberries, 3 bananas, sliced. In a bowl combine the pudding mix and canned pineapple with the juice. Stir until well blended and all the pudding mixture has dissolved. Fold in the rest. (I use SF FF pudding and make sure I dip the bananas and apples, I love the crunch, in Diet 7-UP to keep them from getting brown). Yummy on yogurt.
Best broccoli salad ever!!! (at least that I've tried :-) ) Ingredients -4 heads broccoli, cut in bite size pieces -1 red onion, chopped -1/2 pound bacon, cooked and crumbled -3/4 cup raisins or dried cranberries -3/4 cup nuts (I've only used sliced almonds, but I think cashews would be fantastic), -1 c mayo -1/2 c sugar -2 tablespoons white wine vinegar (I've also used basalmic vinegar and rice vinegar) Directions: mix everything, cool, and serve.
