black bean quesadillas - a meatless main dish Made this tonight but had to use pinto beans rather than black & added a little jalepeno & green onion just to use them up & not waste. Hubs & daughter liked them a lot, as did I. Son didn't., but lately he doesn't like anything.
1 flour tortilla (I use La Tortilla Factory – Smart & Delicious Light: only 80 calories!) 2 tbsp pizza sauce 1/4 cup fat free shredded mozzerella 8 turkey pepperonis Italian seasonings Broil tortilla in the oven for 3 minutes, or until crispy. Spread the sauce, and top with cheese, seasonings and pepperonis, and return to broil for 2 minutes, or until the cheese is melted. Deliciousness!
Skinny Lasagna Rolls: made this tonight 3/23/14. Fantastic taste and simple to make. I added shredded chicken breast along with using cottage cheese and Greek yogurt mix instead of ricotta cheese( which I don't like). And I did not use an egg cause I didn't have one, but will try it the next time I make it. Will be packing the leftovers for my lunch this week!
In a hurry? These satisfying quesadillas take just 15 minutes to make. We like them with black beans, but pinto beans work well too. If you like a little heat, be sure to use pepper Jack cheese in the filling. Serve with: A little sour cream and a mixed green salad.
