    Cannoli Cups, shell made from cupcake pan. Made this for a gathering 02/23/2013. Chopped cinnamon chips in a food processor for a fine dusting on top, instead of chunks of chips, added a better spiced flavor. I will make this again, but will not use pre-made pie crusts - The canoli cups are a great concept, but I plan to keep modifying this recipe: Making my own dough, and adding cream cheese to the filling to give it a better consistency.

Cannoli Cups: 1 package (16 oz.) wonton wrappers/1 container (15 oz.) ricotta cheese/1/4 cup cornstarch/1 1/3 cups whole milk/1/2 cups powdered sugar/1/2 tsp. almond extract/1/2 tsp. vanilla extract/1/4 tsp cinnamon (optional)/2 cups mini semisweet chocolate chips/powdered sugar (for dusting)

Canoli Dip. 1 (15oz) whole milk ricotta ¼c plain yogurt (I prefer Greek) or sour cream ⅓c powdered sugar 1 tsp vanilla ⅓c mini chocolate chips. I substitute the sugar with one teaspoon of honey and use yoghurt rather than sour cream for a healthier option.

Homemade Cannoli- a lot of work and very time consuming. If you don't get the dough paper thin(it hard to do) and oil perfectly perfect, your shells don't work right. They still taste good though
