Baked courgette chips - 1 lb. of zucchini, Italian seasoned Panko bread crumbs, a couple of eggs, and some grated parmesan cheese. (Substitute for Italian-style panko bread crumbs: add 1/2 tablespoon of Italian seasoning, 1/2 tsp. garlic powder, 1/2 tsp. Kosher salt, and 1/4 tsp. onion powder to 1/2 c. plain panko bread crumbs.)

Baked Zucchini Fries

Zucchuni crisps: - 1lb zucchini -1/4 cup panko bread crumbs -1/4 cup grated parmesan -1 tbsp olive oil -1/4 tsp salt  Toss sliced zucchini in olive oil to coat.  Toss in breadcrumb/cheese;salt mixture to coat.  Place rin foil on baking sheet and spray with cooking spray.  Place single layer of sliced, coated zucchuni on baking sheet.  Sprinkle wirh remaining breadcrumb/cheese.  Bake at 400*F for 22-25 minutes

This is our favorite way to eat broccoli or cauliflower of all time! My husband says he would rather eat this than fries. I put a few Tbsp of olive oil in a ziploc with some salt and pepper and the broccoli and shake. Then spread on a cookie sheet and spread minced garlic over it and roast at 425 deg F for 20-25 minutes.
