Main Ingredient : Penne 1lb penne or ziti – ½ pint container grape tomatoes – ½ cup sun dried tomatoes – ½ lb celingini (small mozzarella balls) – 1 large handful of baby arugula – ½ cup sliced garlic – 2 tbsp of olive oil – ¼ cup of extra virgin olive oil – salt and pepper to taste
A beautifully layered salad with shrimp, avocados, grilled corn, black bean salsa, cucumbers, tomatoes served with creamy cilantro tomatillo dressing. YUMM (remove the corn and make a less creamy dressing and this would be a perfect clean eating item!)
BIKINI FIT LUNCH: Black-eyed Pea Salad 2 cans black-eyed peas, 1 diced tomato, 1/2 diced red onion, 1 small or 1/2 large red, yellow, or orange bell pepper, 1 jalapeno,4 green onions, 1/3 cup cilantro, 1/4 cup rice wine vinegar (unseasoned), 2 Tbsp. canola oil, 1/2 tsp. organic cane sugar, salt and freshly ground black pepper. Bean dishes are a good substitute for meat dishes when trying to get fit!
Chipotle Chicken Taco Salad. Only 249 calories for cups! (Made this tonight - substituted non-fat greek yogurt for the regular greek yogurt. Pretty good but need to tweak the dressing a little. Overall everyone liked it. Will keep it with modifications.)
Pear, Blue Cheese and Walnut Salad with a Maple Syrup Vinaigrette. olive oil Tbs); 30 ml red wine vinegar Tbs); maple syrup Tbs and 1 tsp); tsp Dijon mustard; salt Place all of the above ingredients in a small jar and shake, then drizzle over the salad.
