Baked Chicken Fajitas: Mix 1 pd boneless, skinless chicken breasts,cut in strips,15 oz can diced tomatoes,4 oz can diced gn chilies,1 med onion sliced,1 lg bell pepper in sprayed 9 x 13.Mix 2 T veg oil, 2 t. chili powder,2 t. cumin,1/2 t. garlic powder,1/2 t. dried oregano, & 1/4 t. salt.Pour over chix & toss to coat.Bake @ 400 uncovered 20-25 min or til chix cooked through,veg tender. Serve w/ 12 warmed tortillas & enjoy!! gm
Menu Musings of a Modern American Mom: Oven Baked Fajitas - for low Fodmaps, modify by subbing green onion for regular onion, use only red pepper, use natural GF chicken broth. Not sure about chilies and FODMAPS tolerance. Serve with GF corn tortilla or on romaine lettuce. Watch for garlic in pre-made guacamole.
