Impress guests with this savory and unique take on beet appetizers! Start by mixing 4 oz. goat cheese and 2-1/2 tsp. chives until blended. Separately toss 4 oz. pickled beets (cut into 48 slices) with 2 tbsp. balsamic vinegar and a dash of salt & pepper. Cut 4 pitted dates in half lengthwise, then cut each half crosswise into 6 strips. Spread 1 tsp. cheese mixture onto 24 TRISCUIT crackers, then layer with beet and date slices. Sprinkle with remaining chives for the finishing touch!
