    Caribbean Coconut Rice with Garbanzos & Veggies - used broccoli and red pepper instead of green beans and artichokes. Original recipe must have used instant rice. I used long grain Briwn rice and it took 30-40 minutes...I doubled all amounts as well. I had to add veggie broth while it cooked to keep it moist. Turned out good though. Whole family liked it.
