I have been a huge fan of no bake cookies for years.  My mom used to make me chocolate no bakes to take in my lunch when I was much younger and I made them for my kids.  I went to a reception and had peanut butter ones and found a new passion.  I had to have more....and since I have been diagnosed with Type II diabetes I search long and hard for a sweet tasting non-sweet thing to psych out my sweet tongue. I went searching for the recipe and found several on Pinterest and several cooking sites.  No bake sare so great for hot days when you don’t want to use an oven, or just days where you want a sweet treat but don’t feel like actually baking.  I changed up the original recipe with a sugar free version.  I have included both for you.  I ended up with 3.5 dozen of these little melt in your mouth delights.  Ingredients: 1 1/2 cups old fashioned oatmeal 3 1/2 tbsp. peanut butter  ( I use a natural one that only has 4 grams of sugar) 1/2 tsp. vanilla 1 cup brown sugar (1 used 1 cup of Splenda/Stevia sugar replacement) 1/4 cup milk (I used skim) 1/8 cup butter (I used fake margarine) Directions:Spread a sheet of wax paper onto your counter to cool cookies on. In a large bowl mix together oatmeal, peanut butter and vanilla, set aside. In a medium saucepan combine sugar, milk and butter and cook over medium heat and bring to a boil. Boil mixture for a full minute. Remove from heat and pour over oatmeal mixture and stir until oatmeal is completely coated. Spoon out cookie sized scoops onto the waxed paper and allow to cool until set and firm. Store in an airtight container.  Bon Appetite!

Cut the sour cream into the GF Bisquick; Next, add 7up. Then, sprinkle your counter with a little GF Bisquick & add dough to pat it out. Melt butter & pour it into a 9" square baking pan. Cut your biscuits up and arrange them in pan on top of melted butter. Bake 12-15 minutes or until golden brown. Enjoy!

Everyone loves them!!! A box of saltines, 1 1/2 C. of oil, ranch dressing packet, 2 tsp. garlic powder, 2 tsp. crushed red pepper. Mix, pour over saltines in container, bake 10 min. on low. (200* or 250*)these are AMAZING!!!!!

Firecrackers:. A box of saltines (USE CHEEZ IT's), 1 C. of oil, ranch dressing packet, 2 tsp. garlic powder, 2 tsp. crushed red pepper. Serve after 8 hrs of coating! These are SOOO good! I used a box of Big Cheez It's and one sleeve of saltines crackers for mix.

You know when you're hot you're hot; when you're not, you're not! 4 sleeves saltine crackers 1-1/2 cups oil 1 package Ranch party dip 2 teaspoons red pepper flakes (crushed) 1 teaspoon sea salt Pour two sleeves of crackers into a gallon plastic bag. Mix oil and ranch dip, red pepper flakes, and salt in a small bowl. Pour half the oil mixture over the crackers. Zip bag and turn it upside down. Shake until crackers are well coated. Put the remaining crackers into the bag and pour the remaining oil mixture over crackers. Zip bag; turn over and over until crackers are coated. Let sit 24 hours; turning bag every now and then so crackers soak up all of the oil.

MMM mmm good! Perfect crunch, perfect sweetness, a little tang, and, like I said, MMM mmm good! Every bite left me wanting more. Coconut Chicken with Orange Dipping Sauce Printable Version 1 egg 1 cup sweetened coconut flakes ½ cup flour ½ tsp. garlic powder ½ tsp. salt ¼ tsp. black pepper 4 boneless, skinless chicken breasts ½ cup butter, melted 1/2 cup orange marmalade 2 Tbs. Dijon mustard Preheat oven to 400 degrees. Beat egg in medium bowl; set aside. Mix the coconut, flour, garlic powder, salt and peeper in a shallow bowl. Working with one chicken breast at a time, dip the chicken in the bowl with the beaten egg and then coat with the coconut mixture. Place on the baking sheet. Once all the chicken breasts are coated and on the baking sheet, evenly drizzle with the melted butter. Bake for 30 minutes, or until cooked through. Prepare the orange sauce by combining the marmalade and the mustard together. Serve with rice or quinoa. Serves 4. Recipe adapted from Pennies on a Platter

Cheesecake Chocolate Chip Cookie Bars Chocolate chip cookie layer: 1/2 cup unsalted butter 1/2 cup butter flavored vegetable shortening 1 cups brown sugar 1/2 cup granulated sugar 2 tsp vanilla extract 3/4 tsp salt 1 T cider vinegar 1 large egg 1 tsp baking soda 2 cups all-purpose flour 2 cups semisweet chocolate chips Cheesecake layer: 1 package (8 oz) cream cheese, at room temp 1/2 cup sugar 1 egg 1/2 tsp vanilla Directions: 1. In a large mixing bowl, cream together the butter, shortening, sugars, vanilla, salt and vinegar. Beat in the egg, then the baking soda and flour. Stir in the chocolate chips. Divide the dough into two equal portions and set aside. 2. In a medium mixing bowl cream the cream cheese with the sugar until thoroughly combined. Beat in the egg and vanilla. 3. In a 9x13 pan, spread 1/2 of the cookie dough mixture evenly across the bottom. (This is somewhat tricky to do. I find it easier to add dollops of cookie dough throughout the pan and then spread all the dollops together. Spread the cream cheese mixture on the top of the cookie dough. With the remaining cookie dough, flatten chunks of dough between your hands into discs, and then place on top of the cream cheese mixture. (The dough discs don't have to touch, just place them near each other so they cover the surface as well as possible.) 4. Bake at 350 for 35-45 minutes, or until the top is brown and cooked through. Cool completely and store in the refrigerator. (To make this in a sheet pan like pictured in this post, double the recipe and press into a 12x17" sheet pan. The cooking time is slightly shorter.)
