Made this last Night for Dinner, wasn't able to get large Zucchini, so I made it with Eggplant instead, soooo Yummy!!! I used and stuffed two eggplants, also I used only about 2 Tbl. Butter and a little Olive Oil and dried Thyme!! =) I also brushed the inside of the eggplant with olive oil before I stuffed them! Will definitely make this again and I will continue to use the Eggplant, cause it is just too good!!!
Stuffed Zucchini "I made these with dinner tonight and they were delicious. I didn’t have any sour cream, so I crumbled up some tofu instead, substituted peppers for the onion and added mushrooms. I think they would’ve been better with the sour cream, but they were still very tasty."
