    ~I've made meatloaf in a muffin pan and it came out great and I was left with perfectly portioned leftovers~ Meatloaf is a super easy meal to prepare, but it takes so long. Often you worry about if it is “done” in the middle or not. Instead of using a pan use a muffin tin! It cuts your baking time down to only 15 minutes AND best of all it is perfect for portion control! You can easily use them later in the week for leftovers too.

    Make meatloaf in a muffin pan- it cooks in 20 minutes! Super moist and yummy! This is the only way I cook meat loaf now, makes for good portion control and is WAY more moist and yummy cooking this way, plus it's faster!

Chicken in basil cream sauce. I made this last night when I got home and thought 'What do I have to make for dinner?' I didn't have the pimentos or fresh basil so I used tomatoes and dried basil. I will say that despite these changes this recipe was amazing! Jason and I ate it all! It was creamy, savory, and tender. I can't wait to try to make it with fresh basil! I would highly recommend this recipe. It's cheap, easy, and tastes like its neither! :)
