Apple Cinnamon Smoothie. - 1 apple, chopped - 3/4 inch slice tofu (1/4 block) - 1/4 cup unsweetened apple juice - 3/4 cup unsweetened soy milk (**or milk alternative) - 1 cup raw spinach - 1/2 tsp. cinnamon. Place all ingredients in a blender and blend until smooth. If like me you're not a fan of tofu or soy milk, replace with Greek yoghurt and oat or almond milk.
