Sweet Potato Soup (Sweet Paul) Makes 4 1 onion 1 garlic clove 4 large sweet potatoes 3 large carrots 2 tablespoons olive oil 4 cups vegetable stock ¾ cup whipping cream ¼ teaspoon chili ¼ teaspoon black pepper toasted pumpkin seeds thyme twigs, 4 garnish 1. Peel & chop onion, sweet potatoes, & carrots; sauté in large pot. 2. Add stock & Bring to a boil, then simmer. 3.Cook for 25 min until vegetables are tender. 4. purée the soup and add cream. 5.Stir the soup; bring to a boil; season; garnish
