Lemon herb chicken ring. I added half a cup of sour cream to the mixture because it was pretty dry. I highly recommend cooking the bell pepper before adding to the mixture. They dominated the chicken and cheese. Next time I will add one more vegetable to it as well, like spinach leaves. However, it is definitely a keeper and my husband loved it.

Chicken+Peanut Butter Lettuce Wraps iceberg or romaine lettuce leaves Filling: ½ to ¾ c. chopped Fuji apple (about 1 apple); 1 c. cooked chicken (I boiled mine with salt, pepper,+onion); 20 red grapes, halved; ½ c. chopped red onion; ¼ tsp. salt Sauce: 1 Tbsp. light mayo; 1 Tbsp. honey; 1 Tbsp. all-natural creamy peanut butter Mix all filling +then pour sauce+mix. Spoon into fresh, crispy lettuce leaf+roll it up. Makes four lettuce wraps.
