We made it without the chicken because we were also having buffalo chicken - and it worked well as a side dish. I will try it again WITH the chicken and make it a main dish. Buffalo chicken mac and cheese...Yum! This is like the buffalo chicken dip everyone loves, but with macaroni. It is very filling and this recipe makes enough for a crowd or a few nights left overs. Well worth eating for a second time. I give it a "5".
