Chicken Enchiladas with Chipotle Sour Cream Sauce-I made these last nite. They were so so. The sauce was not spicy and I added another chipotle pepper. The enchiladas were not spicy either, need to add more jalapeno. All in all, I found this recipe boring and doubt I will make it again. The Ro*tel tomatoes should have been a tip off. I believe in using the purest ingredients when cooking, and just like fire roasted, canned, tomato products, with no added ingredients or preservatives.

Better-Than-Ever Beef Enchiladas--Ok, i used Pappasito's salsa from the Houston-based restaurant because that is what I had at home. (Refrigerated section fresh salsa would also be delicious).  I also didn't have all of the Italian seasoning, so I used a packet of dry Ranch.  In Pioneer Woman's recipe she uses chopped green chilis, so I added a can of those, too.
