ONE POT PEST SHRIMP so easy!! 1 c quick-cooking barley 1 pkg bagged broccoli florets 1¼ lb uncooked peeled med shrimp ½ c sun-dried tomato pesto BRING 2 cups water to a boil in a pot Stir barley, cover, cook over med heat for 5 min PLACE broccoli florets on top of barley, cover cook 5 minutes STIR in shrimp and 1 or 2 tsp vinegar, cover,cook 2 min. Remove from heat and let stand, covered,til shrimp are done, about 4 min. STIR in sun-dried tomato pesto, salt and black pepper to taste.
