Fun Finger Foods - Cut 1 cm off the cherry tomatoes, remove the seeds. Fil w/ the tomatoe tapenade and finish w/a mini mozzarella ball. Put on a skewer. In a small bowl, mix the x virg olive oil, lemon zest & parsley. Roll the skewers in the oil, put in a serving vase or platter.

Cool idea for serving the classic mozzarella and tomato salad.

When I make these, I don't cut the tomatoes in half and I buy the mini ball mozzarella to make it VERY easy. I use slightly longer skewers and put them in a martini glass rather than on a plate. Sooo cute and DELICIOUS!!!!

Roasted Tomato Caprese Panzanella. We LOVE it- I just recommend using smaller pieces of mozzarella since cheese is fatty. And I only use a tiny bit of balsamic glaze. Delish!
