caprese - from Italy - I like to take the cherry tomatoes (cut in half), mini fresh mozzerella balls, fresh basil, olive oil, and fresh diced garlic and toss them all together in a bowl and allow them to sit at room temp for a few hours before serving. Fun Finger Foods - Cut 1 cm off the cherry tomatoes, remove the seeds. Fil w/ the tomatoe tapenade and finish w/a mini mozzarella ball. Put on a skewer. In a small bowl, mix the x virg olive oil, lemon zest & parsley. Roll the skewers in the oil, put in a serving vase or platter.
When I make these, I don't cut the tomatoes in half and I buy the mini ball mozzarella to make it VERY easy. I use slightly longer skewers and put them in a martini glass rather than on a plate. Sooo cute and DELICIOUS!!!!
