baked veggie egg rolls. gonna make these today. EDIT- I made these and they crisped up fine in the oven. Probably only tok a tablesppon and a bit of oil ( I brushed it on the sheet and then on the tops of the rolls with a pastry brush. ) The only problem is that 3 wrappers have 180 calories! What!? That's a lot. ( I ate 4 rolls anyway. ;p )
Baked Southwestern Eggrolls by annieseats-- These were very good and pretty healthy! We didn't have enough spinach so I added a tomato into the mix. Everything tasted goood. We used fresh spinach instead of frozen and just sauteed it and then chopped it.
